Today I thought I’d share with you a healthier fix to one of our famous sweet-tooth cravings: the buckeye balls. With the football season only a month away (yay!), these lovelies will be a great tailgate alternative!
Here’s what you’ll need:
- 2 cups (1 bag Jiffy brand) powdered peanut butter
- 1/2 cup refined coconut oil; +1 tablespoon for chocolate
- 1/4 cup raw honey
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 4 oz. (1 bar Ghirardelli 60% cocoa ) dark chocolate
In a medium-size bowl mix powdered peanut butter, coconut oil, honey, extract, and salt until cookie dough consistency forms. Make sure everything is fully incorporated. Using a small cookie dough scooper/spoon roll mixture into 1 inch balls (yields approximately 20). Set peanut butter balls aside and using a double-boiler, melt chocolate and coconut oil together until a shiny ribbon-forming consistency occurs. Dip top 1/3 of the peanut butter balls into the melted chocolate before placing on cooling rack/in refrigerator to harden. Serve/hoard and enjoy!
